Winter menus: February 5 One Pot Chili Mac Winter is the season for “comfort food” and chili mac fits the bill! We’ll have a little greenery with fresh broccoli and cap it off with a light fruit salad. February 12 Coconut Curry Rice Bowl With a base of jasmine rice, coconut milk and curry, we’ll jazz up our bowl with sweet potatoes, chickpeas, spinach and maple syrup. Toasted pita bread on the side and ice cream with strawberries for dessert – YUM! February 19 Chicken Tortilla Soup A rotisserie chicken makes this hearty soup a breeze to put together, so we’ll make our own tortilla strips for the topping. With a salad and chocolate pudding for dessert, our meal is complete. February 26 Puffy Oven Pancake People always like “breakfast for dinner” so this winter we are making a puffy oven pancake topped with fresh fruit and whipped cream. We’ll keep it light with turkey bacon and after-dinner mints.
