With a salad and marshmallow brownies, our meal is complete. Wednesday, April 24 - Chicken Tamale Casserole Cornbread makes a delicious crust for this casserole of chicken, eggs and just a hint of jalapenos. A side of beans and chips & salsa call for a cool scoop of mint chocolate chip ice cream for dessert. Wednesday, May 8 - French Toast Cups Spring is a great time to enjoy “breakfast for dinner” and these fruity French toast cups fit the bill. We’ll also have turkey sausage links and a no-bake dessert. Thursday, May 16 - Thai Peanut Salad A wonderful summer salad with chicken and noodles in a peanut sauce. We’ll “wrap up” the spring season with some vegetable lettuce wraps and our favorite fruit smoothies.
