Join Jan Grover, longtime Minneapolis Community Education instructor, for a 4.5-hour tour of four independent metro butcher’s shops that can help you up your grilling, smoking, and roasting games! These fine, long-established shops offer personal services, deep knowledge and experience, and hand-cut meats raised locally or regionally. No pre-cut, shrink-wrapped meats here!

Each shop’s staff of butchers can custom-cut meat for you, suggest optimal techniques for cooking it, and help you become a better meat cook. Each makes a wide variety of scrumptious sausages and bacons smoked on-site.

You’ll drive yourself from site to site, where we’ll meet outside each shop before exploring its meat cases, both fresh and frozen. You’ll find cuts you’ve never seen or used before because these shops cut entire sides of meat animals; the more obscure cuts are frozen after cutting because there’s less demand for them. Some of them are the best!)

Because we’re touring in June, remember to bring an insulated bag to keep your purchases cold and safe. Bring your checkbook, if you have one, to save these small shops from the transaction fees that credit cards impose on them.

There will be options to buy lunch (sandwiches) at our first two stops.

You'll receive an extensive handout on the history and special offerings of each butcher's shop, along with recipes using their meats. 

We will start at the farthest meat shop and work our way back to Minneapolis.

Group meets at Noon on Saturday, June 21at Hagberg's Meats located at 11325 Stillwater Blvd, Lake Elmo, MN 55042.

Transportation is on your own.

Group size is limited to 10.

Jan Zita Grover

JAN ZITA GROVER has cooked, catered, run a professional kitchen, and taught classes for more than 30 years. An historian by training, she is particularly interested in the cuisine of other countries and the foods eaten by early settlers. Growing up in San Francisco, Jan was exposed to the food traditions of many Asian, Latin American, and European cultures. She loves teaching the basic techniques so people can improvise joyfully and skillfully on their own. In 2008, during the Great Recession, she created the “3 Days, 3 Ways” program of thrifty recipes for St. Paul's Mississippi Market.
