Festive Tarts for the Holidays (Southwest)

Tarts are faster, sleeker, and easier to serve than pies, and with citrus and cranberries in season November through January, here's the class to season you as a splendid tart maker. And for those who see fruit as a meh tart filling, there's always chocolate ganache! You'll make tartlets in this class rather than full-sized tarts, using a terrifically tasty, shell-thin tart dough that comes together in a jiffy. Your detailed handout provides a formula for scaling up ingredients to whatever-sized tarts you want to bake at home. Bring an open cardboard box and some tissue paper to take home your treasures safely.

Jan Zita Grover

JAN ZITA GROVER has cooked, catered, run a professional kitchen, and taught classes for more than 30 years. An historian by training, she is particularly interested in the cuisine of other countries and the foods eaten by early settlers. Growing up in San Francisco, Jan was exposed to the food traditions of many Asian, Latin American, and European cultures. She loves teaching the basic techniques so people can improvise joyfully and skillfully on their own. In 2008, during the Great Recession, she created the “3 Days, 3 Ways” program of thrifty recipes for St. Paul's Mississippi Market.
